For Frosting

One-half 8-ounce container Cool Whip Free

¼ cup fat-free cream cheese, softened

2 tablespoons Splenda No Calorie Sweetener (granulated)

½ tablespoon zero-calorie sugar-free strawberry syrup

teaspoon vanilla extract

1 drop neon pink food coloring

For Cupcakes

2 cups moist-style white cake mix (½ of an 18.25-ounce box)

1 cup diet black cherry soda

½ cup egg whites (about 4 egg whites)

6 medium strawberries, pureed

Directions

Preheat oven to 350 degrees.

Combine all frosting ingredients in a medium bowl. Using an electric mixer at medium-low speed, blend for about 1 minute (until frosting is thoroughly mixed). Chill frosting in the freezer for 20 minutes and then transfer to the fridge (until
ready to frost cupcakes).

In a large bowl, stir to combine cake mix, soda and egg whites. Add pureed strawberries and food coloring, and mix with electric mixer at medium-high speed until smooth (about 45 seconds). Evenly spoon batter into a 12-cup muffin pan spritzed with nonstick cooking spray or lined with baking cups.

Place pan in the oven and bake 15 to 20 minutes (until firm). Let cool completely before frosting. Once cool, remove cupcakes from the pan and evenly spread frosting over them.

This chapter contains some of the BEST and most fun recipes in the book. One of the HG rules (and there aren't many!) is that you should, in general, avoid drinking tons of calories. Chewing and swallowing food is more satisfying than sipping stuff through a straw. But that doesn't mean you have to write off decadent drinks. 5 ounces light vanilla soymilk

1 tablespoon Coffee-mate Fat Free French Vanilla powdered creamer, dissolved in 1 ounce warm water

1 teaspoon instant coffee

3 no-calorie sweetener packets

5 to 8 ice cubes
or
1 cup crushed ice

2 tablespoons Fat Free Reddi-wip
