Bittersweet Volantene Stout

A Word of Wisdom
If you choose to use flaked oatmeal rather than oat malt, remember to steep with a pound of pale malt to convert the starches in the oatmeal. For a ready-made brew similar to Bittersweet Volantene Stout, try Santa Cruz Ale Works Dark Night Oatmeal Stout or Ninkasi Brewing Company Oatis Oatmeal Stout.

A Word of Wisdom
To roast barley, spread a measure of pale malt onto a sheet pan. Bake for 15 to 30 minutes in a 350°F oven. Remove from the oven, cool, and store in a paper bag for a couple of weeks to mellow. Boundary Bay Brewery Scotch Ale, Kilt Lifter by the Pike Brewing Company, and Founders Brewing Company Dirty Bastard are all brews akin to Direwolf Ale.
Merman’s Black Stout
Lord Manderly (also known at times as Lord Too-Fat-To-Sit-A-Horse) enjoys his food and his drink, especially in vast quantities and served in the company of others. The Lord of White Harbor also ages a fine black stout in his cellars, one that he’s only too happy to share in celebration of the great wedding he is to attend in the godswood of Winterfell. Though he may sit with the Starks’ enemy to defend his family, the only dark side of Lord Wyman seems to be his taste in stout! (

Adding the hops in for 90 minutes boosts the amount of bitterness extracted from the glands. Going beyond 90-minute boil time, while tempting, produces grassy, vegetal, nasty flavors. Black brews like Boundary Bay Brewery Dry Irish Stout, Founders Brewing Company Kentucky Breakfast Stout, and Rogue Ales Shakespeare Stout could stand head-to-head with Merman’s Black Stout on any day.
Manderly Autumn Ale
If any man in Westeros knows how to pair brews and banquets, it is Lord Manderly of White Harbor. This fine autumn ale is perfect for a harvest feast, letting pumpkin and grains sing farewells to the productive days of summer. As a signature house brew, it’s also emblematic of White Harbor’s status as a major trading port, combining exotic spices with native ones for an unforgettable warm flavor. (

Mash the pumpkin with the grain. The exact contribution of pumpkin to the beer’s flavor is negligible, but people add it for the romance of it. Used in large enough quantities (and from fresh roasted), you can pick up squash and jalapeño notes. Other autumnal seasonal amber ales include Redhook Ale Brewery Late Harvest Autumn Ale and Magic Hat Brewing Company Roxy Rolles.
Lannister Gold IPA
The true words of the House Lannister are “Hear me roar,” but good luck finding someone who doesn’t first equate this famly of lions with gold and the practice of paying debts. The Lannisters being the richest family in Westeros, any alcohol made on their land would surely reflect the wealth they are known for. This IPA shines like Lannister armor and has a mineral-driven crispness. If one offered such a drink to Tyrion, he would no doubt insist that only the kitchen staff of Casterly Rock could have created it, on his father’s orders. (
