If you choose not to make your own corn muffin mix, you can use 2 (8½-ounce) packages of store-bought corn muffin mix.

I get my crab roe from my trusted seafood purveyor because it's a hard-to-come-by item. You can make the soup without the crab roe (and it still tastes fabulous without it), but it wouldn't be she-crab soup. I've heard that if you're unable to find crab roe, you can substitute a finely chopped, hard-cooked egg.

Carolina Gold Rice, a long grain rice, is an heirloom grain—a trendy ingredient first grown in the Lowcountry regions of South Carolina and Georgia in the late 1600s. Although it is a bit pricey, it is sought out by serious foodies for its delicious taste and enticing aroma. The gold in the name refers not to the color but to the economic stronghold that this lucrative staple maintained. It is available in grocery stores and gourmet kitchen shops in the Lowcountry of South Carolina and online at www.ansonmills.com.
