SHEPHERD’S PIE

PREP TIME: 10 MINUTES / COOK TIME: 30 MINUTES

The earliest versions of shepherd’s pie, also known as cottage pie, served as a way to use leftover meat and vegetables in a new dish. Often the day after a roast dinner, all of the elements of the meal would show up on the table as a lovely cottage pie. Typical shepherd’s pie uses mashed potatoes. This one uses spiralized sweet potatoes, instead.

Spiralizer alternative:
If your spiralizer doesn’t come with a pin to create slices for potatoes with the straight blade, cut the spirals into individualized rounds. An hourglass spiralizer will not work for the sweet potato. Instead, use a vegetable peeler to shave it into slices.

2 tablespoons olive oil

1 pound ground beef

1 onion, chopped

1 carrot, peeled and chopped

1 celery stalk, chopped

1 teaspoon chopped fresh thyme

½ teaspoon chopped fresh rosemary

2 tablespoons Worcestershire sauce

½ teaspoon sea salt

¼ teaspoon freshly ground black pepper

¼ cup heavy cream

1 sweet potato, peeled, ends cut flat, and spiralized into potato-shaped noodles

3 tablespoons butter, melted

1. Preheat the oven to 400°F.

2. In a large sauté pan, heat the olive oil over medium-high heat until it shimmers. Add the ground beef and cook, crumbling with a spoon, until it is browned, about 5 minutes.

3. Add the onion, carrot, and celery and cook, stirring occasionally, until the vegetables are soft, about 5 minutes more.

4. Add the thyme, rosemary, Worcestershire sauce, salt, pepper, and heavy cream. Stir to combine.

5. Put the mixture in a 9-by-9-inch baking pan.

6. Place the sweet potato rounds in an even layer over the top. Brush with the butter.

7. Bake in the preheated oven for 20 minutes, until the potatoes are golden.

 

Substitution tip:
Love cheese? Sprinkle 2 ounces of grated cheese over the top of the potatoes before baking.

BEEF STROGANOFF
WITH SUMMER SQUASH NOODLES

PREP TIME: 3 HOURS SOAKING TIME, PLUS 10 MINUTES ACTIVE PREP / COOK TIME: 25 MINUTES

Beef stroganoff originated in 19th century Russia. Typically made with strips of steak and mushrooms, this version uses ground beef. Choose ground beef that is 85 percent lean for best results. Use yellow summer squash (the kind that looks like yellow zucchini) for this recipe.
