Yields:

Ingredients:

2 ½ cups Chicken Broth

4 cups Water

4 Potatoes, peeled and diced

4 Carrots, finely chopped

1 Onion, diced

1 Red Bell Pepper, diced

2 Celery Stalks, finely chopped

4 tbsp Chicken Soup Base

1 cup Mayonnaise

¼ cup dry Potato Flakes

1 cup shredded Cheddar Cheese

8 ounces Processed Cheese Food

½ cup shredded Swiss Cheese

½ tsp ground Black Pepper

 

Method of Preparation:

  1. Combine the water, onions, potatoes, carrots, chicken broth, soup base and pepper, in a large pot.
  2. Bring to a boil.
  3. Reduce the heat and simmer for 15 minutes.
  4. Add bell pepper and celery.
  5. Simmer for 5 more minutes.
  6. Slowly, add mayonnaise, constantly whisking.
  7. Reduce to heat to medium-low.
  8. Stir in the three types of cheese.
  9. Cook until melted, about 5 minutes.
  10. Stir in the potato flakes.
  11. Serve after 15 minutes of resting.
  12. Enjoy.
Cheese-Stuffed Turkey Burgers

Method of Preparation:

  1. In a bowl, combine the meat, egg substitute, chili powder and salt.
  2. Make 8 patties.
  3. Put the cheese slices on 4 patties.
  4. Top with the remaining patties.
  5. Press gently to seal the cheese.
  6. Grill the burgers for 5 minutes on both sides.
  7. In a small bowl, combine the salsa and yogurt.
  8. Half the burger buns.
  9. Place burgers on 4 of the halves of the bun.
  10. Top each burger with onion and lettuce.
  11. Divide the salsa mixture between the burgers.

6 ½ cups Tomato Sauce

1 ½ cups Sour Cream

 

Method of Preparation:

  1. Preheat the oven to 350 degrees.
  2. Grease a 9x13 inch baking dish.
  3. Cook pasta in boiling salted water until al dente.
  4. Drain and rinse.
  5. Over medium heat sauté the onion for 2 minutes.
