Yields:

Ingredients:

1 large head of Cauliflower, cleaned

1 packaging of Bacon

 

Method of Preparation
:

  1. Preheat the oven to 350
    °F.
  2. Position the cauliflower flower-side up. Cover the cauliflower with the bacon, tucking them below the cauliflower.
  3. Place the cauliflower on a baking tray and bake it for 1 hour or until the cauliflower is tender and the bacon is crisp. Serve and enjoy!
Cauliflower “Nacho Chips”

 

These aren’t your usual nacho chips. These are a healthier and tastier alternative to the classic corn chips! Give it a try!

 

Yields:
Makes 3 Servings.

 

Ingredients:

1 head of Cauliflower

3 Eggs

3 cups Cheese of your choice

 

Method of Preparation
:

  1. Preheat the oven to 450
    °F.
  2. Using a food processor, process them until they look like the consistency of rice.
  3. Combine all the ingredients into a bowl and set it aside.
  4. Using the mixture, form them into 12 6” circles. Place them on a baking tray lightly coated with oil.
  5. Bake them in the oven for 12 minutes. Flip the circles and bake for another 5 minutes.
  6. Take them out of the oven and cut them into triangles.
    Allow it to cool for 3 minutes then serve and enjoy!
Creamy Cauliflower Casserole

 

A creamy and delightful appetizer that makes your mouth water at the smell of this dish. One for the entire family to enjoy and something to dig into for a small party!

 

Yields:
Makes 6 Servings.

 

Ingredients:

1 head of Cauliflower, cut into florets

1 tbsp. Olive oil

1 Shallot, minced

2 Garlic cloves, minced

2 tbsps. Cornstarch

1 cup Milk

Salt and pepper to taste

1 cup Parmesan cheese, grated

 

Method of Preparation
:

  1. Preheat the oven to 400
    °F.
  2. In a pot over medium heat, pour the oil and sauté the onion and garlic for 3 minutes or until fragrant.
  3. Sprinkle the cornstarch to make a roux. Pour the milk and stir until thick. Sprinkle ½  the cheese and mix to combine.
  4. Using an oven-proof baking dish, arrange the florets and pour the milk mixture over the cauliflower.
  5. Sprinkle the remaining cheese over the cauliflower and bake for 20-25 minutes or until the corners and cheese are lightly browned.
  6. Serve and enjoy!
Curried Cauliflower and Potatoes

 

Curry potatoes and cauliflowers that spark up your taste buds and boost up your appetite for the upcoming main course!

 

Yields:
Makes 6 Servings.

 

Ingredients:

1 ½ pounds Potatoes

2 tsps. Brown mustard seeds

2 tbsps. Olive oil

1 Shallot, minced

2 Garlic cloves, minced

2 tsps. Fresh ginger

1 tsp. Cumin

½ tsp. Curry powder

2 cups Cauliflower florets

½ tsp. Turmeric

¼ tsp. Cayenne pepper

1 cups Water

Salt and pepper to season

1 cup Frozen peas

¼ cup Fresh cilantro, chopped

 

Method of Preparation
:

  1. Using the potatoes, Peel and cube them. Placed in a bowl of water enough to cover the potatoes. Set it aside.
  2. Using a large pan over medium heat, cook the mustard seeds until they start to pop. Add the oil, onion, ginger, and garlic. Sauté for at least 5 minutes until tender and fragrant.
  3. Add to the same pan, cumin, curry, turmeric, turmeric, and cayenne pepper. Mix to combine. Drain the potatoes and toss them in the potatoes and cauliflower florets.
  4. Add the water and cook for 15 minutes or until the potatoes and cauliflower are tender.
  5. Season with salt and pepper. Toss in the peas and cook for another 5-7 minutes or until the liquid has been absorbed by the potatoes.
  6. Garnish with cilantro and serve. Enjoy!
Greek Cauliflower

 

This tender and creamy cauliflower side just tastes spectacular with the tanginess from the feta and kick of the paprika is just amazing.

Ingredients:

1 large head of Cauliflower, cut into florets and cleaned

Salt and pepper to taste

1 tsp. Smoked paprika

 

To make the cheese mixture:

¼ cup Butter

¼ cup Flour

2 cups Milk

1 cup Feta cheese, crumbled

2 Eggs

 

Method of Preparation
:

  1. Preheat the oven to 300
    °F.

To make the cheese mixture:

  1. Using a large pan over medium heat, toss in the butter and allow it to melt. Sprinkle the flour and mix it around in the melted butter. Add the milk and mix once again. Once it has started to thicken, add the cheese. Set the cheese mixture aside.
  2. Using the eggs, pour half of the cheese mixture and whisk until they are well combined. Then add the rest of the cheese mixture.

To complete the dish:

  1. Using a oven-proof baking dish, arrange the florets, season them with salt and pepper. Cover them with the cheese mixture. Sprinkle the paprika. Bake for 15 minutes. Serve and enjoy!

½ cup Shallot, minced

 

Method of Preparation
:

  1. Combine all the ingredients into a bowl until it turns into a smooth batter.
  2. Preheat a pot with enough oil to deep fry.
  3. Drop the coated florets into the oil and fry them until brown.

Ingredients:

6 cups Cauliflower florets

2-3 tbsps. olive oil

Salt and pepper to taste

2 tbsps. Unsalted butter

2 tbsps. All-purpose flour

2 cups Milk

1 cup Grated sharp cheese

Method of Preparation
:

  1. Preheat the oven to 425
    °F.
  2. Coat the florets in the oil and season them with salt and pepper. Arrange them on a baking tray and bake them for 10 minutes or until golden.
  3. Using a large pan over medium heat, melt the butter and toss in the flour. Mix until it turns into this thick paste.
  4. Add the milk and whisk it into the butter mixture. Continue to whisk the mixture until it starts to thicken. Once it has thickened, toss in the roasted cauliflower in a blender and add the milk mixture as well.
  5. Blend until smooth. Season with salt and pepper until your desired taste. Serve and enjoy!
Shepherd’s Pie with Mashed Cauliflower

 

This pie topped with the mashed cauliflower just makes an amazing main course that the entire family will love. The savory taste of the beef, the sweetness of the carrots, and the tomato paste just leaves your mouth begging for more!

 

Yields:
Makes 6 Servings.

 

Ingredients:

1 head of Cauliflower, chopped

4 tbsps. Olive oil

1 tsp. Ground cumin

1 Shallot, diced

4 Garlic cloves, minced

2 Celery sticks, diced

2 Carrots, peeled and diced

3 cups Ground lamb

2 ½ tbsp. Tomato paste

½ cup Red wine of your choice

1 ½ cup Beef stock

3 tbsp. Leaf parsley, roughly chopped

 

Method of Preparation
:

  1. Preheat the oven to 350
    °F.
  2. Using a large pan over medium heat, pour water and allow it to boil. Place the cauliflower and allow the cauliflower to boil for 10 minutes or until tender. Drain the water and place the cauliflower aside.
  3. Place the cauliflower in a blender and blend until smooth, pour the 2 tbsps. of oil and blend once again. Season with salt and pepper. Set the puree aside.
  4. Using a large pan over medium heat, pour the oil and sauté the onions and garlic until fragrant. Then toss in the celery, carrots, and cumin. Cook for 5 minutes or until the vegetables start to soften and brown. Set the vegetables aside in a bowl.
  5. Using the same pan, toss in the ground lamb and cook until brown. Then add the tomato paste and thyme. Cook for 1 minute then pour the wine and stock.
  6. Simmer for at least 10 minutes while stirring occasionally. Season with salt and pepper.
  7. Using a large ovenproof dish. Spread the meat mixture at the bottom of the dish and spread the cauliflower mash on top of the meat mixture and spread it smoothly.
  8. Bake it in the oven for 30 minutes or until golden. Take the dish out of the oven and sprinkle with the top of the dish with parsley. Serve and enjoy!
