Cauliflower “Tater” Tots

 

An amazing appetizer that just ends with a creamy cheesy note that will make your mouth water! Something for the entire family to enjoy!

 

Yields:
Makes 3 Servings.

 

Ingredients:

2 ½ cups Cauliflower florets

2 Eggs

1 Shallot, minced

2 Garlic cloves, minced

2 tbsp. Fresh parsley, minced

½ cup Monterey jack cheese, grated

½ cup Panko breadcrumbs

Salt and pepper to taste

 

Method of Preparation
:

  1. Using a pot, pour in boiling water and turn the heat up to medium. Once it starts to boil, reduce the heat to low and toss in the cauliflower. Boil the cauliflower for 5 minutes. Drain and set them aside.
  2. Preheat the oven to 400
    °F.
  3. Chop the boiled cauliflower and place them into a large bowl, pour all the ingredients into the bowl and mix to combine.
  4. Shape the cauliflower into tots and place them on a baking tray lined with parchment paper.
  5. Bake the tots in the oven for 25 minutes. Take the tray out of the oven and serve. Enjoy!
Cheesy Cauliflower Bites

 

Crispy, tender, and creamy! This appetizer will be finished the moment it hits the family table!

 

Yields:
Makes 4 Servings.

 

Ingredients:

3 cups Cauliflower florets, cleaned

1 ½ cup Panko breadcrumbs

¾ cup Grated parmesan cheese

½ cup Grated mozzarella cheese

2 Eggs, beaten

1 tbsp. Fresh parsley, minced

 

Method of Preparation
:

  1. Preheat the oven to 400
    °F.
  2. In a large bowl, combine the breadcrumbs, cheeses, and parsley. Set them aside.
  3. Using the beaten eggs, dip each cauliflower into the eggs and coat all the cauliflower in the breadcrumbs mixture.
  4. Place all the coated cauliflowers into a baking tray and bake them for 20-25 minutes or until golden. Serve and enjoy!
Cauliflower Cheesy “Breadsticks”

 

A great appetizer that will replicate your classic breadsticks and will leave a lingering memory you’ll never forget!

 

Yields:
Makes 6 Servings.

 

Ingredients:

2-3 cup Cauliflower florets, minced

1 Egg

1 ½ cup Tex mex cheese, grated

1 tsp. Italian seasoning

Salt and pepper to taste

Any marinara sauce of your choice for dipping

 

Method of Preparation
:

  1. Preheat the oven to 375
    °F.
  2. Using a food processor, process them until they look like the consistency of rice.
  3. Pour the processed cauliflower into an oven-proof dish. Bake them in the oven for about 20 minutes.
  4. Take the dish out of the oven and transfer the cauliflower into a bowl lined with a large clean face towel. Leave the cauliflower for 15 minutes to allow it to cool.
  5. Using this time, turn up the heat of the oven to 450°F.
  6. Fold the towel and squeeze out the water from the cauliflower. Transfer the cauliflower into a large bowl and pour all the ingredients into the bowl. Reserve ½ cup of the cheese. Mix to combine.
  7. Pour the cauliflower mixture into a baking tray lined with parchment paper and shape the cauliflower into 9x7” rectangle approximately ¼” thick.
  8. Bake it in the oven for about 20 minutes. With the remaining cheese, sprinkle it over the cauliflower and bake for another 5 minutes or until the cheese turns golden.
  9. Cut them into 12 breadsticks and serve with a side of marinara sauce. Enjoy!
Baked Cauliflower Bites with Sweet Chili Sauce

 

The sweetness and spiciness of the sauce will take the cauliflower to new heights on the deliciousness scale.

 

Yields:
Makes 1-2 Servings.

 

Ingredients:

½ head of Cauliflower, cut into florets

1 ½ cups Panko breadcrumbs

2 Eggs, whisked

 

To make the sauce:

2 tbsps. Sweet chili sauce

2 tsps. Hot sauce

¼ cup Greek yogurt

1 tbsp. Honey

 

Method of Preparation
:

  1. Preheat the oven to 400
    °F.
  2. Dip the florets into the beaten eggs and roll them into the breadcrumbs
  3. Line the florets into a baking tray and bake them for 20 minutes or until golden.
  4. Take the tray out of the oven and set them aside in a bowl.

To make the sauce:

  1. Combine all the ingredients into a bowl and serve in a bowl.
  2. Serve the cauliflower with the sauce and enjoy!
Cauliflower Tortillas

 

No flour! Your usual tortillas but not so many carbs as the flour version! Something to try when you want to try something new!

 

Yields:
Makes 6 Servings.

 

Ingredients:

½ head of Cauliflower

2 Eggs

¼ cup Fresh cilantro, chopped

Juice of ½ a lemon

Salt and pepper to taste

 

Method of Preparation
:

  1. Preheat the oven to 375
    °F.
  2. Using a food processor, process them until they look like the consistency of rice.
  3. Pour the processed cauliflower into an oven-proof dish. Bake them in the oven for about 20 minutes.
  4. Take the dish out of the oven and transfer the cauliflower into a bowl lined with a large clean face towel. Leave the cauliflower for 15 minutes to allow it to cool.
  5. In a bowl, combine the cauliflower, eggs, cilantro, lemon, salt and pepper. Mix until they are well combined.
  6. Using the cauliflower mixture, shape them into 6 tortillas. Place them on a baking tray with parchment paper and bake them in the oven for 10 minutes. Flipping them 5 minutes each time.
  7. Bake for another 10 minutes without flipping them and take them out of the oven.
  8. Using a large pan over medium heat, place the baked tortillas on the pan and fry them 2 minutes each side. Repeat with the remaining tortillas. Serve and enjoy!
