Cookies are quick and easy to make and are a great way to continue the theme of a larger cake. A few cookies tied up with ribbon or placed in a cellophane bag make great take-home treats either for children’s parties or as wedding favours.

This is my tried-and-tested recipe for delicious cookies. They can be plain or delicately flavoured (see box) and iced or just dusted with sugar.

MATERIALS

175g (6oz) butter

200g (7oz) caster sugar

2 large eggs

400g (14oz) plain flour (plus extra for dusting)

1 teaspoon baking powder

Golden granulated sugar (optional – see tip)

Cling film

Large rolling pin

Cookie cutters

Baking tray

Small palette knife

Wire cooling rack
