Multi-Grain Bread

You can increase fiber in your diet with this healthy quick bread. It's good for you and it tastes delicious.

Preparation time:
15 minutes

Approximate cycle time:
1 1/2 hours

Yield:
16 slices, 32 servings, or 12 muffins

3/4 cup water

1/4 cup orange juice

1/4 cup vegetable oil

1 large egg

1 1/3 cups Betty's Base Bread Mix

3/4 cup whole-wheat flour

1/4 cup dry oatmeal

1/4 cup corn meal

2 tablespoons 7-grain cereal

1 Follow the directions under Betty's Basic Bread Mix, earlier in this chapter.

If you like nuts in your quick breads, you may add 1/2 cup coarsely-chopped nuts to any quick bread recipe without changing any other ingredient amount.

Seven-grain cereal may not be something you usually have on your pantry shelf. You can buy a box and divide it into small amounts, stored frozen in small freezer bags. Be sure to get as much air as possible out of the bag before closing it.

Pumpkin Raisin Bread

Here's a fall bread that's ideal for school or church bake sales. Everyone seems to like a good pumpkin bread, and this is one of the best.

Preparation time:
15 minutes

Approximate cycle time:
1 1/2 hours

Yield:
16 slices, 32 servings

3/4 cup apple juice

1/2 cup mashed pumpkin

1/4 cup vegetable oil

1 large egg

1 1/3 cups Betty's Base Bread Mix

1/2 cup all-purpose flour

1/2 cup whole-wheat flour

1/4 cup brown sugar, packed

1 teaspoon pumpkin pie spice

1/2 cup raisins

1 Follow the directions under Betty's Basic Bread Mix, earlier in this chapter.

If you use canned pumpkin,
you will have some left over. You can freeze it for later use. If you think you'll be using it to make more pumpkin bread, measure out the pumpkin in 1/2 cup amounts and freeze it; you'll have the exact amount you need the next time you make this bread.
