White Pizza

Use the basic pizza crust with the variation that includes Italian herbs and cheese in the dough, and top with the following ingredients.

2 cups ricotta cheese (one 15-ounce container)

1/2 cup shredded mozzarella cheese

1/4 cup grated fontina cheese

1/4 cup grated provolone cheese

2 tablespoons grated Parmesan cheese

2 tablespoons minced Italian (flat leaf) parsley

Pizza Sticks

Glenna made these pizza sticks for the Milwaukee Chapter of the American Institute of Wine and Food Membership Appreciation Event. Members followed her around to get another. They make wonderful appetizers.

Preparation time:
Approximately 2 hours

Yield:
16 sticks

1 Make the dough from the basic pizza recipe and roll into a 16- x 12-inch rectangle.

2 With a dough scraper, sharp knife, or kitchen scissors, cut the rectangle into 12 4-inch squares.

3 Spoon 1 tablespoon of pizza sauce into the center of each square and then sprinkle with shredded mozzarella cheese.

4 Fold the square in half and seal the edges by pressing with your fingers and then with a fork. Brush the tops with egg wash (1 egg whisked with 1 tablespoon water).

5 Bake in a preheated 400° oven for 12 to 15 minutes. Serve warm.

Focaccia

This popular, flat, crusty Italian bread is traditionally served warm and broken into pieces to eat with soup, salads, and barbecued meals — or any meal, for that matter. It normally has a light topping. You can use your imagination for the toppings; they are as varied as the people who create them. We'll give you some suggestions, and then you're on your own.

Suggested toppings include two thinly sliced fresh or jarred roasted peppers, sun-dried tomatoes, thinly sliced fresh red onions, sliced olives, green pepper slices, sesame seeds, and sautéed onions with sugar and salt.

Preparation time:
Approximately 3 hours

Yield:
10 to 12 servings

1 cup water

2 tablespoons olive oil

1 teaspoon salt

4 teaspoons sugar

3 cups flour

2 1/4 teaspoons active dry yeast

1 Be sure that all the ingredients are at room temperature before you place them in your bread pan in the order listed.

2 Select the Dough or Manual setting and press Start.

3 After the machine has completed the cycle, remove the dough onto a lightly floured work surface and shape it into a ball. Place on a greased cookie sheet and flatten to a 10-inch circle.

4 Give your Focaccia a unique appearance: With a table knife, cut a circle in the dough about 1 inch from the edge, cutting almost through to the cookie sheet; with a fork, prick all over the center section.

5 Arrange the selected toppings in the center section and drizzle with olive oil over the entire Focaccia. Sprinkle with Italian seasonings, salt, and pepper to suit your taste. Cover and let rise for approximately 15 minutes.

6 Bake in a preheated 375° oven for 25 to 30 minutes.
