The Swedish Tea Ring is easy to make and very attractive. This is the special treat that Glenna makes for holiday giving. In fact, friends have come to count on receiving a warm wreath delivered on Christmas Eve. Glenna bakes them ahead and keeps them wrapped in aluminum foil and frozen. Then she allows them to thaw on Christmas Eve day. While she and her family are at the Christmas Eve church service, she places them in a warm oven.
Upon returning home, she unwraps the aluminum foil enough to drizzle Powdered Sugar Glaze over each one, and then loosely folds the foil back over the wreath. She wraps the rings in big bath towels to keep them warm during the delivery time. Members of her family love to help with the deliveries just to hear the oohs and aahs.
Preparation time:
3 1/2 hours
Yield:
18 to 20 slices
1/2 cup milk
1/4 cup water
1 egg
2 tablespoons butter
1 teaspoon salt
1/4 cup sugar
3 cups bread flour
2 1/4 teaspoon active dry yeast
1 Be sure that all ingredients are at room temperature before you place them in your bread pan in the order listed.
2 Select the Dough or Manual setting, and press the Start button.
3 After the machine has completed the cycle, remove the dough and place it on a lightly floured work surface.
4 Roll the dough into a 15-x -12-inch rectangle.
5 Brush with an egg wash (1 egg slightly beaten with 1 tablespoon water).
6 Spread with the filling of your choice. (See the recipes following for our ideas.)
7 Starting with the longer side, roll up the dough tightly and pinch the edges to seal.
8 Form a ring, work the ends together, and pinch to seal.
9 Place the ring, seam side down, on a greased cookie sheet.
10 With scissors, make cuts 1 inch apart along the outside edge to within 1 inch of the center of the ring.
11 Turn each slice on its side.
12 Cover and let rise in a warm place until an indentation remains after lightly touching the side of ring.
13 Bake in a preheated oven at 350° for 25 to 30 minutes.
1/2 cup sugar
2 teaspoons cinnamon
Variation:
To the basic cinnamon filling, you may add 1/2 cup finely chopped nuts or 1/2 cup raisins, or both. Glenna often slices apples and places them on top of the cinnamon filling before rolling up the dough.
Variation:
Using brown sugar in place of white sugar and adding 1/2 teaspoon maple flavoring makes an interesting filling. In place of the egg wash, you could brush the dough with maple syrup before baking.
1/4 cup sugar
1/4 cup corn syrup
1/3 cup water
1 cup fresh cranberries
1/2 cup whole dates, chopped
1/4 cup chopped nuts
2 teaspoons lemon juice
1
In medium saucepan, boil the sugar, corn syrup, and water for five minutes.
2 Add cranberries, cover, and cook for four minutes, stirring occasionally.
3 Add chopped dates, and cook for one minute.
4 Remove from heat, and stir in nuts and lemon juice.
5 Cool completely before placing on the dough.
