September — Apple Kuchen

Kuchen is a yeast coffee cake. What better way to showcase fresh fall apples than on a base of soft but not too sweet cake? Perhaps slightly warm from the oven? Maybe with a scoop of ice cream?

Preparation time:
20 minutes

Approximate rising time:
2 hours

Baking time:
25 to 30 minutes

Yield:
2 9-inch cakes

Use 1 recipe Basic Danish Dough

6 Granny Smith, Macintosh, or other tart baking apples, peeled, cored, and cubed

2 tablespoons unsalted butter, melted

Topping

1/3 cup unsalted butter, softened

2/3 cup all-purpose flour

1/3 cup dark brown sugar, packed

4 teaspoons granulated white sugar

2 teaspoons ground cinnamon

1/4 teaspoon grated or ground nutmeg

Dusting

1/4 cup confectionery sugar

1 On a lightly floured work surface, divide the dough into two parts.

2 Pat each half into a greased 9-inch round cake pan, forming a narrow rim around the edge.

3 Spread with softened butter.

4 Arrange the apples evenly over the dough.

5 Combine the remaining topping ingredients and sprinkle over the apples.

6 Cover and let rise until an indentation remains after lightly pushing in with a finger on the rim of the kuchen, approximately two hours.

7 Bake in a preheated oven at 350° for 25 to 30 minutes until the edges are golden brown.

8 Cool on a wire rack.

9 Generously dust the cooled kuchen with powdered sugar.

October — Elephant Ears

Calling all kids — we have your favorite snack! You can even make them yourself. And they have cinnamon and chocolate! Yum. They are so good. You could use them for a party. You could even decorate them to look like jack-o'-lanterns for Halloween.

Preparation time:
30 minutes

Approximate rising time:
2 hours

Baking time:
15 to 18 minutes

Yield:
1 cake

Use 1 recipe Basic Danish Dough

Add 2 squares (1 ounce each) semisweet chocolate, melted but not hot

2 tablespoons melted butter (do not add this to the dough)

Filling

1/3 cup sugar

1 teaspoon cinnamon

Topping

2 tablespoons melted butter (do not add this to other topping ingredients)

1/2 cup sugar

1/2 cup finely chopped pecans or walnuts

1 teaspoon cinnamon

1 On a lightly floured surface, roll the dough to a 12-inch square.

2 Brush the dough with melted butter.

3 Sprinkle filling over dough.

4 Roll the dough tightly.

5 Pinch the edge to seal.

6 Cut the dough into 12 slices.

7 Place on greased cookie sheets 3 to 4 inches apart.

8 Flatten each slice to a 4-inch circle.

9 Cover and let rise until an indentation remains after lightly pushing in with a finger on side of one roll (about two hours).

10 Prepare topping by combining sugar, nuts, and cinnamon.

11 Cover each roll with waxed paper.

12 With a rolling pin, flatten each roll to 1/8-inch thick.

13 Brush the rolls with melted butter.

14 Sprinkle the topping over the rolls and re-cover each roll with waxed paper.

15 With a rolling pin, roll the topping into the rolls.

16 Bake in a preheated oven at 400° for 15 to 18 minutes until rolls are crisp around the edges.

17 Cool on wire racks.

Chicken salad spread

A simple chicken salad served in a tea roll (see the June recipe) with a few small lettuce leaves is elegant and appeals to everyone's palate.

2 cups finely diced chicken

1 cup finely chopped celery

2 tablespoons chopped pickles

1 teaspoon seasoned salt

1 teaspoon poultry seasoning

1/3 cup mayonnaise or salad dressing

3 tablespoons plain yogurt

Combine ingredients and refrigerate.

Fill sandwiches just before serving.

Canned boneless chicken eliminates the time-consuming cooking and chopping steps, and comes precooked in chunk or shredded form as white, dark, or mixed meat. It is packed in broth, sauce, or water, with both salted and low-salt varieties available to suit most any flavor. We usually choose shredded, mixed white and dark meat in water for fillings and spreads.

November — Pumpkin 'n Spice Dinner Rolls

These delicately spiced pumpkin rolls are filled with flavors of the fall: ginger, nutmeg, cinnamon, walnuts, dried cranberries, and dark raisins.

Preparation time:
30 minutes

Approximate rising time:
2 hours

Baking time:
15 to 20 minutes

Yield:
12 to 18 dinner rolls

Use 1 recipe Basic Danish Dough (but eliminate one egg when you make the dough)

Add the following:

1 1/2 teaspoons grated lemon peel

1/2 cup canned pumpkin

1/4 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cinnamon

1/2 cup finely chopped walnuts

1/4 cup dried cranberries

1/4 cup dark raisins

Making Parker House rolls

1 Divide dough in half and then each half into three equal sections. Separate each section into three equal parts to make 18 rolls.

2 Flatten each part into a 2 1/2-inch slightly oval shape.

3 Make a crease in the dough, slightly off the middle.

4 Fold the smaller side over the larger side.

5 Press the edges together.

6 Place rolls 2 to 3 inches apart on greased cookie sheets.

7 Cover and let rise until an indentation remains after lightly pushing in with a finger on side of one roll (about two hours).

Bake rolls in a preheated oven at 375° for 12 to 15 minutes.

Making Cloverleaf rolls

1 Grease the cups of a muffin pan.

2 Divide dough in half and then half again. Separate each section into three equal parts to make 12 rolls.

3 Divide dough for each roll into thirds.

4 Shape each third into a smooth ball (see the cooking tip for shaping dough balls in Chapter 8).

5 Place three balls in each muffin cup.

6 Cover and let rise until an indentation remains after lightly pushing in with a finger on side of one roll (about two hours).

7 Bake rolls in a preheated oven at 375° for 15 to 20 minutes.

Variation: You can brush warm rolls with melted butter for a softer crust.

December — Saint Lucia Crown

In Sweden, this double-tiered braided coffee cake, which looks like a crown, is served with hot coffee at dawn on St. Lucia's Day, December 13, to signal the opening of the Christmas season. Even if you're not Scandinavian, this “crown” makes a beautiful centerpiece for holiday brunches or buffets.

Preparation time:
30 minutes

Approximate rising time:
2 hours

Baking time:
20 to 25 minutes

Yield:
12 dinner rolls

Use 1 recipe Basic Danish Dough

Add the following:

1 1/2 teaspoons grated lemon peel

1/2 teaspoon saffron threads powdered to 1/4 teaspoon

3 tablespoons chopped candied citron

3 tablespoons chopped almonds

Glaze

1 egg, large

1 teaspoon water

Icing and decorations

1 cup sifted confectionery sugar

2 tablespoons hot water

1/2 teaspoon vanilla extract

Candied cherries

1 Cut off one-third of the dough and set aside.

2 Divide the remaining dough into three equal parts.

3 On a lightly floured surface, roll each third to a 24-inch rope.

4 Loosely braid from center to ends and shape the braid into a circle, weaving the ends into each other.

5 Place the braids on a large, greased cookie sheet, 3 to 4 inches apart.

6 Make a smaller braided wreath with the remaining third of dough.

7 Cover and let rise until an indentation remains after lightly pushing in with a finger on side of one braid (about two hours).

8 Whisk together the glaze ingredients with a fork, and brush on braided wreaths.

9 Bake at 350° for 25 minutes for large wreath, 20 minutes for small wreath, or until wreaths are golden brown.

10 Remove from cookie sheets and cool.

11 Combine icing ingredients (confectionery sugar, hot water, and vanilla extract).

12 Make holes for 16 candles in the small wreath.

13 Place the small wreath on the large wreath.

14 Drizzle with icing.

15 Decorate with candied cherries and candles.

Festival of Light on St. Lucia's Day

The Christmas season in Sweden begins on December 13 to celebrate the return of more hours of daylight to the dark Sweden winter. This day begins when an appointed daughter plays the role of St. Lucia, a young Christian girl martyred in the year 304 in Syracuse, Italy.

The daughter rises early in the morning, puts on a long white dress, sometimes with a crimson sash and stockings. On her head, she wears a crown of evergreen leaves, topped with seven lighted candles. In this costume, she goes through the house serving hot coffee and special holiday breads to her family before they get out of bed.
