THE SPANISH NATIONAL DISH
A romance set in Spain wouldn’t be complete without mention of
paella,
the Spanish national dish. If your taste runs to Spanish foods, you won’t be disappointed with this saffron-flavored entree.
What you need:

cloves garlic, chopped

cup olive oil
3-4
lb. chicken, cut into pieces
2
cups rice, uncooked
2
tsp. saffron 4 cups hot chicken stock
1
cup peas
2
sweet red peppers, sliced
8
thin slices
chorizo
or other highly seasoned sausage 12 raw shrimp 12 clams in shells
What to do:
Preheat oven to 350°F. (176°C.). In a Dutch oven, lightly sauté garlic in olive oil over a moderate heat. Remove garlic. Brown chicken in same oil, remove and set aside. Add rice to oil and stir until lightly browned. Dissolve saffron in chicken stock, then add to rice. Mix in peas, peppers, sausage and chicken. Cover and bake for 30 minutes. Arrange shrimp and clams on top, then cover and return to oven for 10 minutes. Makes 6 to 8 servings.
