Coffee mill or hand blender

INGREDIENTS

2 carrots, finely chopped

½ avocado, chopped

1 tomato, chopped

DIRECTIONS

Process the chopped carrots in a coffee mill if you have one, or with a hand blender. The coffee mill will give the best results for this recipe.

Add the chopped tomato and avocado, and process until everything is mixed. You may need to take the mill off the processor and shake it from time to time. This is a lovely light dip, but very satisfying.

Spread this on strong Batavia or romaine lettuce, top with some chopped green onion, fold and enjoy!

INGREDIENTS

2 cups fresh, canned, or frozen pears, thawed

1 cup fresh or canned pineapple

¼ cup hot or mild green chilis

½ cup to 1 cup sugar or other sweetener, to taste

1 teaspoon fruit fresh or lemon juice

DIRECTIONS

Place all the ingredients in your Vita-Mix container in the order listed. Secure the 2-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Run for 3 minutes. Store this spread in an airtight container in your refrigerator.

INGREDIENTS

½ cup coconut oil (butter)

½ teaspoon butter extract

2 tablespoons honey

small dash turmeric, for color

⅛ teaspoon sea salt

DIRECTIONS

Mix all the ingredients together in a small bowl with a firm spatula or fork.

Spread on
Almond Cinnamon Bread
, or on a slice of
Corn Bread
. Store at room temperature in a glass jar.

INGREDIENTS

1 cup horseradish root, peeled and cut in pieces

½ cup vinegar

1 tablespoon sugar or other sweetener

¼ teaspoon salt

DIRECTIONS

Place the empty container on its base. Secure the 2-part lid. Select VARIABLE, speed #1. Turn on the machine and quickly increase speed to #5. While the
machine is running, remove the lid plug and drop in the pieces of horseradish until all the pieces are grated.

Stop the machine. Scrape down the sides of container with spatula. Select VARIABLE, speed #1. Turn on the machine and quickly increase the speed to #8. Add the remaining ingredients. Run for 15 to 20 seconds or until well mixed. Refrigerate in an airtight container.

INGREDIENTS

2 cups macadamia nuts

½ cucumber, juiced

5 stalks celery, juiced

1 lemon, juiced

1 teaspoon paprika

½ cup olive oil

DIRECTIONS

Combine all the ingredients in a blender. If you’re using a Vita-Mix, simply blend until you have mayonnaise. If you’re using a regular blender, transfer the mixture to a blending bowl once the nuts are broken down. Finish off with a hand blender for a smoother mayonnaise.
