Makes: 1½ cups Prep time: 10 minutes
3 tablespoons gluten- and wheat-free white or red miso paste
½ cup extra virgin olive oil
juice of ½ lemon
1 clove garlic
½ cup water
1 tablespoon apple cider vinegar
1 tablespoon low-sodium, gluten-free tamari
1-inch piece fresh gingerroot, peeled
Blend all the ingredients in a food processor until smooth, about 2 minutes. Store in an airtight jar in the refrigerator for up to 5 days.
