1 (12-ounce) can evaporated milk
1 cup sugar
Pinch of salt
1 teaspoon vanilla extract
In a medium pot melt the butter over medium heat. Add the cocoa powder. Add the evaporated milk, sugar, and salt. Cook over low heat for about 25 minutes, stirring often. Stir in the vanilla.

FUDGY FROSTING
F
udgy Frosting is good for Chocolate Cake (page 185) or Banana-Nut Cake (page 183).
Because there is so much sugar in it, we suggest using a nonstick pan; it makes cleanup so much easier.
¼ cup (½ stick) butter
1 (14-ounce) can sweetened condensed milk
cup chocolate chips
1 teaspoon vanilla extract
In a small pot combine the butter in the milk. Cook over medium-low heat until the butter is melted. Bring to a boil, stirring constantly. (This scorches easily, so be careful). Boil for 1 minute and remove from the heat. Add the chocolate chips and vanilla. Stir until the chips are melted and the mixture is smooth. Cool until it is spreadable, about 30 minutes.
MAKES ABOUT 2 CUPS (ENOUGH TO FROST TWO 9-INCH LAYER CAKES)
GRANDMOTHER SAUCE
O
nce you have tasted Grandmother Sauce, you will never go back to ordinary whipped cream. I am not sure how it got its name, but it is sweet like a grandmother should be. We put it on top of all of our desserts. Many customers ask for a side of this sauce so they can spoon more on.
2 cups whipping cream
1 egg
1 cup sugar
¼ cup butter, melted
1 teaspoon vanilla extract
Whip the cream in a large mixing bowl. In a medium bowl beat the egg with an electric mixer until thick and lemony colored. Gradually add the sugar, beating until thickened, about 2 to 3 minutes. Stir in the melted butter and vanilla. Gently fold in the whipped cream. Chill at least 1 to 2 hours so the sugar dissolves.
MAKES 5 CUPS
