Preheat the oven to 400°F.
Trim the stem ends of the green beans and wax beans and place them on a rimmed baking sheet. Coat with the EVOO, and season with salt, pepper, the red pepper flakes, and the garlic. Roast for 25 to 30 minutes, until very tender and lightly browned, stirring the beans once after 15 minutes. Serve immediately.

from the heart with leafy tops, finely chopped

, seeded and finely chopped

red onion
, finely chopped
Place the stock and ½ cup water in a sauce pot with a lid. Add the garlic and a little pepper and bring up to a bubble over high heat. Add the barley, return to a boil, then cover the pot and reduce the heat to low. Cook until the barley is tender and has soaked up all the liquid, about 45 minutes.
While the barley is cooking, whisk together the mustard and vinegar in a salad bowl. Whisk in the EVOO in a slow, steady stream, and season with salt and pepper.
Once the barley is cooked, fish out the garlic cloves and discard. Transfer the barley to a colander and rinse under cold water for about 1 minute, swooshing it around with your hand; drain thoroughly. Add the barley to the bowl with the dressing and toss to coat. Add the celery, tomatoes, and onions, toss to combine, and adjust the seasonings.
