Adjusting and customizing the recipes

 

These recipes have been created to:

  1. Be easy to make
  2. Be delicious
  3. Use easy to find ingredients

 

However, there is not a one size fits all recipe, everyone has different tastes, some have allergies and not everyone will be able to get all of the ingredients. Consider the recipes as a guideline to which you can then customize to your taste or to what you have in the house.

 

  • Love coconut? Try coconut flour instead of almond.
  • Do not have any pink rock salt in the house? Just use some normal table salt instead.
  • Do not like strawberries? Try blueberries.

 

I have included some suggestions throughout for alternatives, but could not list every single one. Only you know what your preferences are, so have some fun with it and play around with different ingredients and recipes.

Strawberry Fat Bombs

Preparation time:
5 minutes

Cooking time:
0 minutes

Serves:
12

 

Ingredients:

  • 4 tablespoons butter
  • 4 tablespoons coconut oil
  • 2 ounces heavy cream
  • 3 regular sized strawberries, diced
  • 2 teaspoons Truvia

 

Directions:

  1.    
    Wash and dice the strawberries. Place in an blender or food processor, followed by the heavy cream and sweetener. Process for 15-20 seconds.
  2. Melt the butter in the microwave and add to the blender along with the coconut oil. Blend until the mixture is smooth and creamy.
  3. Using a piping bag, drop fat bombs into a heart mold and place in the freezer for at least 30 minutes.  When the fat bombs are set, remove from the mold and enjoy.
  4. Keep stored in the freezer.

Coconut Eggs

Preparation time:
25 minutes

Ingredients:

  • 3 ounces shredded coconut, unsweetened
  • 2.5 ounces coconut oil, melted
  • 3 tablespoon coconut cream
  • 1 tablespoon granulated stevia
  • ½ teaspoon vanilla

Chocolate Coating

  • 2 ounces coconut oil, melted
  • 6 teaspoons cocoa powder
  • 2 teaspoons granulated stevia or sugar-free sweetener of choice, to taste

 

Directions:

  1.    
    In a small bowl, combine the coconut oil, coconut cream, sweetener, vanilla and shredded coconut.
  2.    
    Place the mixture in the fridge for 25-30 minutes. Then shape into egg shape balls and place on a plate lined with wax paper. Return back into the fridge and chill until the eggs have hardened.
  3.    
    To prepare the chocolate coating, in a small bowl, whisk the coconut oil, cocoa powder and stevia together until smooth. Coat the eggs thoroughly with chocolate coating and refrigerate until the coating is set.

  • ½ cup almond butter
  • ¼ cup butter
  • 2 tablespoons coconut oil
  • 1 tablespoon sugar-free maple syrup

 

Directions:

  1.    
    Combine the almond butter, coconut oil and butter in a microwave-safe bowl and microwave for 2 minutes until melted, stirring halfway through.
  2.    
    Stir in the maple syrup.
  3.    
    Spoon the mixture into paper liners designed for candies and freeze for at least 30 minutes until hardened.

Mascarpone Fat Bombs

Preparation time:

Ingredients:

  • 1/3 cup mascarpone cheese
  • 1/3 cup unsweetened coconut flakes
  • 1/3 cup coarsely chopped walnuts and/or pecans
  • 1 tablespoon Truvia

Coating:

  • 4 tablespoons butter
  • 2 tablespoons heavy white cream
  • 2 tablespoons unsweetened cocoa
  • 2 tablespoons Truvia

 

Directions:

  1.    
    In a medium bowl, mix the mascarpone, coconut flakes, nuts and sweetener together. Mix well and shape the mixture into small balls. Place on a plate lined with parchment and place in the fridge.
  2.    
    Meanwhile, prepare the coating. Combine the butter and heavy cream in a bowl and microwave for 30-35 seconds, stirring once halfway through.
    Stir in the sweetener and cocoa and mix until well combined.
  3.    
    Remove the chilled balls from the fridge and thoroughly coat with the prepared cocoa mixture. Return back to the fridge and let them chill for another 15-20 minutes.
  4.    
    Keep stored in the refrigerator.
