Lemon Cornmeal Cake

1 cup yellow cornmeal

2 cups all-purpose flour

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 cup butter, softened

1 ¾ cups sugar
(can substitute Splenda)

1 Tablespoon grated lemon zest

¼ cup lemon juice

4 eggs

1 cup buttermilk

Glaze

1 cup sugar
(can substitute Splenda)

¼ cup lemon juice

Heat oven to 325°F. Grease and flour a 9 x 13 or Bundt cake pan.

Sift together flour, cornmeal, baking powder, soda, and salt. Set aside. In a separate bowl, beat butter and sugar until creamy. Add lemon zest and juice mix. Beat four eggs together, then add to mixture. Blend in flour mixture and buttermilk until batter is smooth. Pour into pan. Bake 1 hour.

For glaze, mix sugar and lemon juice and brush onto warm cake. Let cool and serve.

Rhubarb Cobbler

Filling

1 ½ cups sugar

½ teaspoon cinnamon

4 cups rhubarb, chopped

1 ½ cups water

2 Tablespoons butter

Topping

1 cup flour

½ cup sugar

1 ½ teaspoons baking powder

¼ teaspoon salt

¼ cup butter

6 Tablespoons milk

¼ cup chopped pecans

In a saucepan combine 1 ½ cups sugar and cinnamon. Add rhubarb and water. Cook and stir until mixture boils; reduce heat and cook 5 minutes. Stir in 2 Tbsp. butter. Pour into a greased baking dish.

For topping, mix flour, ½ cup sugar, baking powder, and salt. Cut in ¼ cup butter; stir in milk and pecans. Spoon dollops onto hot filling.

Bake at 400 degrees for 25–30 min.
