Recipe 9: Fresh Apricot Cake

You will need:

  • Apricots (ripe and chopped coarsely) - 4 large
  • Coconut Flour-1/2 cup
  • Almond Flour- 1 ¼ cup
  • Eggs-4 large
  • Organic Virgin Coconut oil-1/2 cup
  • Maple syrup-4 Tbsp.
  • Baking Powder (gluten-free) - ½ tsp
  • Sea salt-a pinch
  • Organic Vanilla essence-1 tsp

 

Directions:

Line 30cm cake tin with butter paper. Preheat oven to 350 degrees. Sift and sieve the dry ingredients. Whisk eggs till fluffy. Add the wet ingredients and whisk well. Fold in the dry ingredients. In the end mix the chopped apricots. Tip the batter in the cake tin and bake for 35-40 minutes or till a knife inserted in the middle of the cake comes out clean.

Recipe 10: Chestnut Apricot Cake

You will need:

  • Apricots (ripe)-4 large
  • Eggs-4 large
  • Organic Chestnut Flour-1 ½ cup
  • Organic Almond Flour-1/2 cup
  • Fine quality Cacao Powder-3 Tbsp.
  • Organic Brown sugar-2/3 cup
  • Coconut milk cream-1 cup
  • Chestnuts-15
  • Lemon juice (fresh)-2 Tbsp.
  • Baking powder (gluten-free)-2 Tbsp.

 

Directions:

Line 20cm cake tin with parchment paper. Preheat oven to 350 degrees. Roast chestnuts in pan. Keep aside. Separate eggs. Sift dry ingredients thrice. Whisk egg white and lemon juice till you get stiff peaks. Now in another bowl, whisk the egg yolks and sugar creamy. Now add all the dry ingredients and whisk on slow till combined. Fold in the egg white softly till entirely incorporated. Now add the chopped pieces of apricot and chestnuts. Tip the batter into the cake tin and bake for 40 minutes or till a knife inserted in the middle of the cake comes out clean.
